摘要: Olive leaves, an agricultural waste, have great potential as a natural antioxidant. The current study was made to assess the antioxidant and antimicrobial activities of both individual combined phenolics in olive leaf extract. A mixture prepared by amount ratios phenolic compounds results showed that exhibited good radical scavenging abilities, also revealed superoxide dismutase (SOD)-like activity. In terms activity, oleuropein caffeic acid inhibition effects against microorganisms. Furthermore, effect significantly higher than those phenolics. These show combination extract possessed activities. This indicates might be valuable bioactive source, would seem applicable health medical food.
