Saccharomyces cerevisiae strains associated with the production of cachaça: identification and characterization by traditional and molecular methods (PCR, PFGE and mtDNA-RFLP)

摘要: A study of the genetic diversity populations Saccharomyces cerevisiae was conducted in ten different cachaca producers (alambiques) southern state Minas Gerais, Brazil. total 106 isolates were identified by PCR using primer SCREC114, specific to S. cerevisiae, pulsed-field gel electrophoresis (PFGE) and restriction fragment polymorphism mitochondrial DNA analysis (RFLP-mtDNA). showed a product amplification 61 isolates, enabling rapid identification alambiques. Nine profiles found PFGE; all yeasts as had similar that marker highlighting specificity SCREC114. RFLP-mtDNA, four enzymes, enabled grouping strains with 80%–100% similarity. Some alambiques higher frequency characterized PFGE, lower level determined indicating ability these lead fermentative process.
