摘要: The rheological properties of soy protein spray-coating dispersions were investigated as a function concentration (10–13.75%) and temperature (30–60°C). showed shear-thinning behavior. With the increase in concentration, consistency coefficient (κH) values increased. An increasing led to an flow behavior index (nH) decreasing κH. However, Cox–Merz rule was not applicable coating dispersions. Soy protein–celery composite paper sheet prepared by spraying on surface celery sheet. cohesion fiber resulted sealing paper. seal strength increased with concentration. from 114.850 160.560 N/m, when 10 13.75%. © 2012 Wiley Periodicals, Inc.
