摘要: Lactic acid bacteria perform an essential role in the preservation and production of wholesome foods. Generally lactic fermentations are low-cost often little or no heat is required their preparation. Thus, they fuelefficient. fermented foods have important feeding world's population on every continent today. As world rises, fermentation expected to become even more preserving fresh vegetables, fruits, cereals legumes for humanity.
