摘要: The reaction products of peroxidase, a hydrogen donor and peroxide decreased the amount lysine recovered from proteins after acid hydrolysis. Oxidation peroxidase treated with performic prior to hydrolysis formed α-amino adipic indicating that or quinones by had oxidatively deaminated some lysyl residues protein form aldehyde. Gel filtration polyacrylamide gel electrophoresis revealed dimers, trimers higher polymers were not detected when was omitted. Since dissociated in presence dodecyl sulfate, urea mercaptoethanol, it suggests free radicals interacted cross-linked molecules formation covalent bonds. Oxidative enzymes like polyphenol oxidase may lower nutritive value oxidative deamination lysine, cysteine methionine cross-linking reduce their susceptibility enzymatic
