General phenolic characterisation, individual anthocyanin and antioxidant capacity of matured red wines from two Portuguese Appellations of Origins.

摘要: BACKGROUND The main aim of this work was to evaluate the general phenolic composition, individual anthocyanin content and total antioxidant capacity from 20 commercial matured red wine samples (vintage 2005 2008) produced in two Appellations Origin north Portugal: Douro Dao. RESULTS The results showed that levels compounds, anthocyanins analysed differed significantly. In addition, aged oak wood had a lower (from 13.85 56.79 mg L−1, averaging 46.13 L−1) than wines bottle 25.93 252.82 94.17 L−1). The values quantitative differences among obtained each method applied as well range variation, especially for by DPPH method. CONCLUSION The used study constitute quite heterogeneous group, made different Portuguese grape varieties, with diverse ages ageing processes (bottle barrels); accordingly, they important differences, their composition. Finally, process before bottling negative effect contrast submitted only process. © 2013 Society Chemical Industry
