Adsorption and rheological properties of biopolymers at the air‐water interface

摘要: Dynamics of adsorption and viscoelasticity biopolymers (β-lactoglobulin (β-lg) + polysaccharides (PS)) at 20 °C pH 7 have been studied. Protein concentration in the bulk phase was 0.1 wt %, (xanthan gum, λ-carrageenan, propylenglicol alginate with different degrees esterification viscosity) varied from 0.1% to 0.5 %. The results reveal a significant effect surface-active non on dynamics formation ofadsorbed films air-water interface. rate diffusion increased mixed systems, but more highest polysaccharide (0.5 %). rearrangement adsorbed decreased presence as compared protein film. Competitive adsorption, complexation limited thermodynamic incompatibility between β-lactoglobulin would explain observed effects.
