Defining and interpreting intakes of sugars

摘要: This paper clarifies the myriad of terminologies used to describe intakes sugars by American consumers. In addition, it carefully critiques information sources explain and interpret consumption levels. Sugars are incorporated into foods for their biological, sensory, physical, chemical properties. By definition, normally consumed monosaccharides disaccharides: glucose, fructose, galactose, sucrose, lactose, maltose, trehalose. US governmental agencies use 4 terms sugars: added sugars, caloric sweeteners, sugar, sugars. Different included when measuring Knowledge regarding relies on food intake surveys (primarily dietary recalls) economic availability estimates. Although data may underestimate actual consumption, tend overestimate it. Furthermore, contents many appearing in composition databases derived from summation recipe ingredients rather than measurements. Intakes over time (trends) must be viewed within context varying definitions, changes composition, methods, acknowledged increases underreporting intake. Agreement is needed identify one common definition Convergence between would more accurately depict consumption. Precise amounts currently available should measured, not calculated. Without a language, accurate precise measurements, consensus among scientists, educators, regulatory agencies, public, conversations any health effects lead continued misunderstandings.
