Assessment of quality parameters and microbial characteristics of Cape gooseberry pulp (Physalis peruviana L.) subjected to high hydrostatic pressure treatment

摘要: Abstract The aim of this investigation was to determine the effect high hydrostatic pressure (HHP) on dietary fiber, total phenolic (TPC), vitamin B and E contents, antioxidant capacity (AC) microbiological characteristics gooseberry pulp immediately after processing (300–400–500 MPa/1–3–5 min) 30 days storage at 4 °C. Initially, treatment 300 MPa/1 min reduced microbial counts non-detectable levels ( 3 6 contents were observed respect control samples. After refrigerated storage, insoluble fiber (IDF) soluble (SDF) ratios similar those presented Day 0. Although values TPC lower than 0, an increasing tendency due treatments observed. Regarding capacity, maximum 500 MPa/5 min. Retentions higher 84% for (β+γ)-tocopherols α-tocopherols reported. Therefore, HHP technology seems be a good option stabilization pulp, while it may also preserve most quality including nutritional, physicochemical aspects.
