摘要: Flavour active esters belong to one group of fine aroma chemicals that impart desirable fruity flavour notes and are widely applied in the fragrance industry. Due increasing consumer concern about health, natural products attracting more attention than chemically synthesized substances. The biosynthesis flavour-active via lipase-catalyzed reactions is most important biotechnological methods for generation. To proceed with industrial production on a large scale, it critical understand enzyme properties behaviours under different reaction conditions. In this short review, various systems their mechanisms synthesis summarized discussed.
