摘要: This study was undertaken to evaluate the possibility of using starches from non-conventional sources as alternative solutions when specific functional properties are not provided by conventional starches. Twenty two non-cereal starches, 17 which were roots and tubers South America, evaluated compared common cereals, potato cassava. Variability among clones germplasm (cassava, sweetpotato, yarn, taro, canna) frorn Latin Africa Pacific region. Several properties, mostly sought industrial users, determined: hot paste viscosity, clarity gel, resistance acidic medium (pH 2.4) sterilisation (121°C for 2 hours) stability at -20°C. presented promising results, like starch Canna indica that has very high viscosity is resistant condition -starch Arracacia xanthorrhiza gave clear with low syneresis during freezing storage conditions. The related physico-chemical characteristics. Amylose content strongly correlated degree syneresis. On other hand, mainly granule size: largest granule, higher viscosity. In addition, gel appeared be positively reflecting predominance swelling disintegration cooking on clarity. (Resume d'auteur)
