摘要: Starch extraction from roots and tubers uses grating with water sieves to separate the starch slurry residual mass. The is recovered by decantation or centrifugation. yam difficult due high viscosity of caused non-starch polysaccharides (NSP). establishment an efficient process may turn into a competitive raw material. In this paper Dioscorea alata extracted four methods was characterized in order establish impact treatments. When were digested aqueous oxalic acid/ammonium oxalate (OA/AO) 1/1 solution, it easier mass, because reduced. For all others tested, remained almost same. nitrogen present removed during different extractions extent. largest reduction observed OA/AO followed control (water). spectrum granules sizes obtained also varied according treatment. Results proved that NSP carries small over waste water. smaller diameter 1.9 µm (OA/AO extraction) 13.5 µm (water pectinase extractions). larger 41.0 µm (NaOH treatment) 67.7 µm (OA/AO). All starches showed RVA behavior agreement literature for starch, but differences influence methods. best recovery (18 g starch/100 g tuber yam) granular variation interfered rheological starch.
