摘要: Pig carcasses (122 half carcasses, 52 hams and loins) from the Spanish pig population, were obtained in a commercial slaughterhouse scanned by computed tomography to generate predictive model determining weight lean content. The is mainly based on density correction equation. prediction used area of histogram whole carcass range -250 +800 Hounsfield units added 2769g corresponding average head feet that have not been scanned. content ratio between peak calculated histograms carcass. Both models correlated with manual dissection samples. Results compared calculation root mean square error calibration (RMSEC) for determination show RMSEC 0.6kg can be For meat percentage 1.48% 0.97% ham 1.07% loin. According our results, simple methodology it possible good values accordance EU regulation.
