摘要: The present invention provides a composition comprising dietary fibers with high water holding capacity (WHC) wherein said is obtained from tomato pulp which substantially free of seed, peels, carotenoids and lipids exhibits WHC, in weight ratio, the range about 1:13 to 1:60. further use as texturing, bulking, viscosity controlling or syneresis-preventing agent for food. process preparing composition.
