摘要: Mycotoxins are secondary metabolites produced by a wide variety of fungal species that contaminate food or feed. Fumonisins (FUM), deoxynivalenol (DON) and zearalenone (ZEN) examples common mycotoxins in grains have been shown to affect human and/or animal health. Physical, chemical biological methods used for decontaminating containing these toxins. Some treatments reduce the concentration while others ineffective. For example, removal damaged grain density segregation can DON ZEN concentrations corn wheat. In contrast, thermal processing is usually ineffective reducing FUM content foods. More work needed identify effective detoxifying mycotoxin contaminated food.
