Development of the enzyme reactor system with an amperometric detection and application to estimation of the incipient stage of spoilage of chicken

摘要: Abstract An enzyme reactor system with an amperometric detection was developed for the determination of diamines, total concentration putrescine, cadaverine and spermidine, applied to incipient stage spoilage chicken during storage at 5 15°C. The prepared from combination electrode hydrogen peroxide by reaction. packed putrescine oxidase immobilized on chitosan porous beads. Response obtained three substrates, (97% response putrescine) spermidine (96%). limit is 0.01 mM relative standard deviation 2.5% (n=100) linear up 1 mM (R2=0.992). One assay could be completed within 3 min. sufficiently stable least 8 months 4°C usable 300 assays. As saprophytic microorganisms were reached 107/g chicken, generally recognized as indication initial putrefaction, current increased very rapidly because formation diamines microorganisms. These results suggest that proposed provides a simple, rapid economical method spoilage.
