摘要: The composition of triacylglycerols (TAGs) is a very useful parameter to understand several properties creams and anhydrous milk fat products such as nutritional value, technological applications, textural properties. In this paper, the molecular species TAGs equine were identified using combination non-aqueous reversed phase high-performance liquid chromatography, electrospray ionization mass spectrometry high temperature gas chromatography then compared human milk. data showed that contained complex mixture different resulting from widest range its fatty acids particular, largest differences in between concerned containing medium-chain acids; for C8, C10, C12. terms carbon number (CN), with CN36–CN46 most abundant maximum concentration at CN44 (15.3%), while CN44–CN52 predominant CN52 (30%). For both milks studied, experimentally determined distributions deviated those predicted by random hypothesis. corresponding distribution C8/C18/C18, C12/C14/C18, C10/C16/C18 apparently preferentially synthesized Whereas, milk, mixed C16/C18/C18 much higher than would be expected calculation.
