摘要: Triacylglycerol (TAG) molecular weight distribution and regioisomeric structure of selected species in human milk 32 substitutes was determined. Negative ion chemical ionization mass spectrometry used to determine the collisionally induced dissociation tandem applied identify sn-2 sn-1/3 positions fatty acids TAG. The main TAG decreasing order abundance were 52∶2, 52∶3, 52∶1, 54∶3, 50∶2, 50∶1, 54∶4, 48∶1, 54∶2, 48∶2, 46∶1, 52∶4, 50∶3 (acyl carbon number/number double bonds), constituting 83 mol% total species. In substitutes, proportion corresponding varied from 33 87 mol%. regioisomers within 50∶1 18∶1-16∶0-18∶1 (83 mol%), 18∶1-16∶0-18∶2 18∶1-16∶0-16∶0 (80 respectively. proportions a wide range 0–82 mol%, 0–100 0–73 Although structures some closely resembled those milk, great variation among samples leads conclusion that it is still possible improve composition by applying novel methods synthesize structured
