摘要: Biogenic amines (BA) are toxic nitrogenous compounds that can be accumulated in foods via the microbial decarboxylation of certain amino acids. Lactic acid bacteria (LAB) strains belonging to different species and genera have been described as BA producers mainly responsible for their synthesis fermented foods. It is generally accepted capacity produced BAs strain-dependent. However, large number enterococci identified suggests aminogenic trait may a species-level characteristic. Enterococcus faecalis, faecium durans origin were analysed determine produce tyramine putrescine. The presence genes this identity flanking regions checked by PCR. results suggest biosynthesis characteristic E. durans. Putrescine was found E. faecalis, with production occurring agmatine deamination pathway. Some E. faecium human also putrescine; probably acquired horizontal gene transfer.
