摘要: Abstract The bacteriocin-producing Streptococcus thermophilus strains that can dominate in natural dairy ecosystems, may also enhance safety products obtained from cultures. In this study, we sought to identify bacteriocin production and genes 75 of plant origin. were tested for antimicrobial activity against pathogens or pathogen models, spoiling bacteria, lactic acid bacteria associated with products. All moderately inhibited Staphylococcus aureus P310, none Listeria innocua LMG 11387T Clostridium tyrobutyricum 1285T. addition, 14 active one more indicators addition S. aureus P310. Results suggested selection bacteriocinogenic S. thermophilus use biopreservation must take into account effects exerted on bacteria. PCR detection thermophilin proved unreliable predicting activity. For PRI36 PRI45, relevant inhibitory features, identity present 9 cluster defined, thus revealing novel variants genome region.
