摘要: Despite the growing body of literature that provides evidence health benefits a diet high in fruits and vegetables, most Americans eat much less than recommended amounts this food group. Among those who are least likely to meet USDA guidelines for daily servings vegetables non-Hispanic Blacks individuals with lower incomes. The purpose review is examine dietary behaviors, focusing on fruit vegetable intake, low-income African from socio-ecological perspective, offer rationale guidance integrating concepts into promoting programs intended improve behaviors among population. Based 12 descriptive studies retrieved review, intake result complex interplay personal, cultural, environmental factors can be categorized described using five levels influence conceptualized by model: Intrapersonal level (taste preferences, habits, nutritional knowledge skills), Interpersonal level/social environment (processes whereby culture, social traditions, role expectations impact eating practices; patterns within peer groups, friends family), Organizational, Community, Public Policy levels/physical (environmental affect access availability). model useful framework achieving better understanding multiple barriers therefore provide developing culturally appropriate sensitive intervention strategies Americans.
