摘要: Abstract The consumption of soy-based products is associated with a number health benefits and much these are proposed to be due the soy isoflavones daidzein, genistein, glycitein, their glycosides, equol, an isoflavone naturally produced from daidzein. Equol bacterially-derived metabolite daidzein by bacteria in gut those humans capable hosting particular organism. To allow all enjoy new functional food ingredient has been developed that relies on bacterial conversion equol under strictly controlled conditions. This substance, termed SE5-OH, studied extensively for its acute subchronic toxicity Sprague–Dawley rats, as well potential genotoxicity. oral LD50 >4000 mg/kg. In 91-day, study, no-observed-adverse-effect-level (NOAEL) was 2000 mg/kg/day, highest dose tested.
