摘要: A peptic hemoglobin hydrolysate was fractioned by a semi-preparative reversed-phase HPLC and some fractions have an antibacterial activity against four bacteria strains: Micrococcus luteus A270, Listeria innocua, Escherichia coli Salmonella enteritidis. These were analyzed ESI/MS ESI/MS/MS, in order to characterize the peptides these fractions. Each fraction contains at least three contain five peptides. All purified several times obtain pure Thirty identified. From isolated peptides, 24 derived from alpha chains of 6 beta hemoglobin. The lowest concentration (minimum inhibitory (MIC)) necessary completely inhibit growth strain determined. cell population all tested species decreased 97% after 24-h incubation with any minimum concentration.
