摘要: Pyridinoline, a mature crosslink of collagen, was measured in intramuscular connective tissue isolated from ovine semimembranosus, muscle noted for its highly insoluble collagen. Concentration ranged between 0·25 and 0·59 mol/mol on the high side concentrations reported literature this other muscles various species. Pyridinoline concentration inversely related to collagen solubility homogenates (P < 0·0). In comparison biceps femoris gluteus medius, pyridinoline again collage solubility. For all these muscles, remained heat-dependent test, but it is argued that does not explain properties significantly correlated with sensory or shear cooked confirming importance heat-stable crosslinks.
