NMR investigation of acrolein stability in hydroalcoholic solution as a foundation for the valid HS-SPME/GC–MS quantification of the unsaturated aldehyde in beverages

摘要: Abstract Acrolein (propenal) is found in many foods and beverages may pose a health hazard due to its cytotoxicity. Considerable knowledge gaps regarding human exposure acrolein exist, there lack of reliable analytical methods. Hydroalcoholic dilutions prepared for calibration purposes from pure show considerable degradation the compound nuclear magnetic resonance (NMR) spectroscopy showed that 1,3,3-propanetriol 3-hydroxypropionaldehyde are formed. The can be prevented by addition hydroquinone as stabilizer solutions, which then linear concentration-response behaviour required quantitative analysis. stabilized solutions were used headspace solid-phase microextraction/gas chromatography–mass spectrometry (HS-SPME/GC–MS) determination alcoholic with detection limit 14 μg L−1. Of 117 tested beverages, 64 positive highest incidence grape marc spirits whiskey (100%, mean 252 μg L−1), followed fruit (86%, 591 μg/L−1), tequila 404 μg L−1), Asian (43%, 54 μg L−1) wine (9%, 0.7 μg L−1). could not detected beer, vodka, absinthe bottled water. Six had levels above World Health Organization (WHO) provisional tolerable concentration 1.5 mg L−1.
