摘要: Nocardia amarae grown in a liquid medium induced coalescence of emulsions which differed type, composition the organic phase, and structure stabilizing emulsifiers. De-emulsifying activity varied with type growth medium, culture age, postharvest treatment. Based on extraction degradation studies, it was concluded that de-emulsifying properties are due to bacterial cell surface. Thus, bacteria may provide new source agents.
