摘要: Consumer expectations of apple fruit quality have been steadily increasing over the last couple decades. One main attributes affecting product price is colour, determined primarily by relative amounts pigments chlorophylls, carotenoids, and anthocyanins, which can be measured non-destructively visible spectrophotometry. This paper provides a brief overview studies dealing with optical pigment-determination intact fruits in part electromagnetic spectrum. Firstly ripening-associated pigment changes apples as well basics light interaction measurements turbid materials are explained. Subsequently two most appropriate methods for determination presented along examples. followed discussion various reflectance remittance indices qualification, quantification, pigments. Results reported regarding on relationships between spectral data derived destructive ripening parameters. In conclusion some findings reviewed this outlined discussed briefly .
