Characterization of seed proanthocyanidins of thirty-two red and white hybrid grape varieties

摘要: Grape seed extracts are known for their beneficial effects on health and cardiovascular diseases due to antioxidant activity the free radical-scavenging properties of proanthocyanidins (PAs). Moreover, grape tannins used in oenology as additives improve organoleptic characteristics wines, clarification must wines. PAs extract 32 hybrid three V. vinifera varieties were characterized by MALDI-TOF mass spectrometry. Signals 148 compounds identified [M+H]+, [M+Na]+ [M+K]+ adducts B-type A-type formed from catechin/epicatechin subunits up undecamers with galloylation degree 0-7. The number-average molecular weight (Mn) samples, a parameter correlated polymers, polyphenolic content extract, also determined. Profiles compared those samples studied references. 'Terzi 108-6' showed high polyphenols 'Seyve Villard 12-390' higher oligomers. These two therefore potentially very interesting sources antioxidants nutraceutical oenological uses.
