摘要: Provided is a process for producing seasoning having an excellent roast meat like flavor without unpleasant odor derived from yeast and burnt saccharide. The comprises the steps of mixing extract containing at least one cysteine, cystine, methionine, glutathione, γ-glutamylcysteine, cystebylglycine, salts or hydrates thereof in ratio 1% by mass more based on solid content with saccharide and/or nucleic acid-related substance aqueous solution to prepare mixture; heating mixture under two different pH conditions 3.5 5.5 6.0 8.0, respectively 80 130 °C 0.5 8 hours.
