摘要: Yeasts are autolyzed to produce yeast extracts by adding sodium chloride and ethanol active yeasts so as make their concentrations 2 10 % (W/V) 1 9 (V/V) of the total volume autolytic reaction system respectively thereafter subjecting said autolysis. The thus obtained have a good flavour palatability.
