In vitro antioxidant activity and phenolic composition of Georgian, Central and West European wines

摘要: Abstract Georgia is a traditional country of viticulture and winemaking but only few studies have been focused on wines originating from this area. In study, we compared antioxidant effect, total sulfite content concentration 14 phenolic compounds some native Georgian red white with commonly produced in Central Western Europe. exhibited higher capacity DPPH, ORAC assay. Further, were richer quercetin, kaempferol syringic acid content, while the trans -resveratrol was lower than West European wines. While differences among different origins cultivars observed, technology most important factor case Kakhetian method increased effect levels comparison prepared by common method. Our findings suggest that deserve further attention because their high phenolics capacity.
