摘要: The present invention discloses highland barley macaroni and a preparation method thereof, belongs to the technical field of food processing. comprises main materials accessory in weight percentages: comprise 80-90% flour 10-20% wheat gluten; monoglyceride at 0.2-0.4% material weight, 2-4% konjac flour, 0.5-1.5% salt, 0.1-0.3% phosphate 27-33% water. Firstly, solves problems that is poor processing quality not easy be shaped, broken, good mouthfeel, etc.; secondly, by adding gluten, protein content characteristics are increased, so high content, broken during cooking, has appearance mouthfeel more accepted consumers.
