摘要: Abstract Power-compensated differential scanning calorimetry is applied to the determination of thermodynamic parameters protein denaturation. The heating relatively high mass samples (≈40 mg) programmed at scan rates (10°C min −1 ). For these dynamic thermal measurements, attention paid problems sample lag and construction baseline under calorimetric curve. Simplified mathematical models are case denaturation transition β-lactoglobulin α-lactalbumin dispersed in distilled water concentration (≈5% w/w). effects Na + Ca 2+ addition on conformational stability proteins upon treatment compared pH 3.5 7, where two major whey display different behaviours.
