摘要: Accessibility of the Hydroxyl Groups in Starch for Deuterium Oxide. Previous measurements accessibility starch yielded contradictionary results. Fore that reason an investigation was carried out by a new method. The OH-protons could be exchanged more extensive than predicted IR-measurements. different results are explainable difficulties quantitative evaluation IR-spectra.
