摘要: Abstract A rapid and non-destructive method, based on pulsed NMR spectroscopy, has been developed for the study of wheat starch–water interaction. It involves a Gaussian fitting FID signals from liquid solid phases obtained by resulting in an exact repeatable quantification these different phases. Moreover, standard addition method range water/starch ratio greater than 0.55 allows use water as internal reference.
