摘要: Abstract A rapid and non-destructive method, based on pulsed NMR spectroscopy, has been developed for the study of wheat starch–water interaction. It involves a Gaussian fitting FID signals from liquid solid phases obtained by resulting in an exact repeatable quantification these different phases. Moreover, standard addition method range water/starch ratio greater than 0.55 allows use water as internal reference. This reference signal is good agreement with total amount hydrogen atoms sample, regardless solid/liquid ratio. allows, starch suspensions deuterium oxide, determination proportion which ‘liquid’ behaviour (7.5%) quantity exchangeable hydroxyl groups (2.6:3) granule.
