摘要: The aim of this work was to evaluate the interactive effects different rates nitrogen and potassium fertilisation on phenolic composition grape berries during ripening. To achieve objective, in 2000 a trial carried out Tempranillo vineyard located ‘Ribera de Duero’ Apellation d'Origine area (Spain). plants were treated with three (0, 50 200 g N per vine) 60 120 K2O doses, applied as ammonium nitrate sulphate respectively, randomised complete block design four replications. rate did not significantly affect either vigour or productive capacity vines size berries. However, high doses caused substantial delay accumulation sugars ripening compared other treatments. High supplies decreases total acidity but chromatic parameters must at harvest. Three stages could be distinguished development polyphenol contents skins ripening: slow initial increase, sharp fifth sixth weeks after veraison final period reduction until no added showed more polyphenols skin than those treatments, especially last few sampling. These differences between treatments became less dose increased. vine increased levels anthocyanins (600 mg l−1 standard extract) untreated control (532 l−1), colour density must. degree polymerisation condensed tannins decreased when ratio N:K balanced amounts both nutrients high.
