Electron spin resonance studies on γ‐irradiated coffee bean parts

摘要: Summary Using electron spin resonance (ESR) free radicals, present naturally or formed after γ-irradiation of parts coffee bean, were examined by entrapping the sample in potassium chloride powder ESR quartz tubes. The signal at g=2.002 was more prominent spermoderm than whole seed portion beans. beans with doses 5 10 kGy, normally used for decontamination, resulted a dose-dependent increase which accompanied weak triplet (aH c. 3.0 mT), and also spermoderm. While short-term storage (24 h 25 ± 0.5 °C) irradiated substantial loss g=2.002, annealing 50 ± 0.5 °C 16 h increased this intensity greater proportion caused irradiation alone, suggesting that generation radicals two varieties is not unique to processing alone.
