摘要: Lactic acid bacteria produce various antibacterial peptides such as bacteriocins that are active against pathogenic and spoilage microorganisms. Very little attention has been paid to the production of lysozyme an antimicrobial enzyme. The present work represents one few studies reporting by enterococci. Indeed, this study was first conducted evaluate activity Enterococcus lactis Q1, enterocin P-producing strain previously isolated from fresh shrimp (Penaeus vannamei), multidrug-resistant clinical isolates. Results showed significant inhibitory (P < 0.05) towards diverse pathogens. purification substances produced Q1 leads isolation two fractions. SDS-PAGE mass spectrometry analyses fraction number 2 (fraction 2) revealed presence a protein with molecular 14.3 kDa. Additionally, experimental results consistent spectra industrial (Fluka ref. 62970). confirmed plate method Micrococcus luteus ATCC 4698. Also, sensitivity different concentrations investigated. For time, shows E. produces which could be excellent candidate in food biopreservation or functional foods promote health benefits.
