摘要: Abstract An inhibitor of lipoxygenase, acetonylacetone bis-phenylhydrazone (AABPH), markedly reduced the formation major volatile C6 products isolated by pressure steam distillation-hexane extraction wheat plant homogenates. The compound was active on extracts containing lipoxygenase activity and completely inhibited at a concentration 2.5 μM. Two other inhibitors, phenidone nordihydroguaiaretic acid, were not as AABPH. Linoleate added prior to homogenization increased quantities certain derived volatiles, whereas heat treatment caused marked reduction in production all compounds.
