Enterotoxigenic potential of Staphylococcus aureus isolated from Artisan Minas cheese from the Serra da Canastra - MG, Brazil

摘要: This study aimed to evaluate the presence of enterotoxigenic S. aureus in endogenous starter and Artisan Minas cheeses from Serra da Canastra. Sixteen samples starters cheese were collected during rainy dry seasons. The isolation enumeration performed using PetrifilmTM-Rapid Plate Count method. enterotoxin was analyzed by Optimal Sensitivity (OSP) method ELFA-VIDAS®-Staph enterotoxin-II assay. strains tested for their ability produce enterotoxins polymerase chain reaction (PCR) assay classical genes. data showed that staphylococcal A (SEA) detected 75% samples, but no toxin with ELFA-VIDAS It found 12.5% isolated produced C (SEC). When assay, only one isolate harbor an gene, contrary our expectations. However, discrepancies between immunological molecular assays are not uncommon. Despite fact most isolates did enterotoxins, high counts causes concern since there is a risk non-classical enterotoxins.
