摘要: The kinetics of inhibition Listeria innocua strain Lin11 in a nutrient broth containing either nisin, pediocin AcH, or enterococcin EFS2 at concentrations ensuring 2–3 log reduction the population were first investigated. rate differed considerably between bacteriocins. At time that maximum viability loss occurred cultures nisin (12 AU ml−1) AcH (50 survivors resumed growth, although medium retained most its initial inhibitory activity. displayed increased resistance not only toward bacteriocin they contact with, but two other bacteriocins under study.
