摘要: Publisher Summary This chapter explains how 2 H NMR can be used to obtain a detailed picture of lipid hydration and the effects some fusogenic agents. Hydration surfaces is common property all glycerophospholipid bilayers. The phospholipid head groups, especially phosphate, choline, carboxyl, carbonyl are mainly involved in interaction with water molecules. Because lipids generally determined lamellar phase, concept phospholipids includes both bound possibly trapped water. Swelling phospholipid/water dispersion ceases if repulsive forces counterbalanced by attractive forces. An important consequence binding creation water-mediated between These result from structuring at surface. There different experimental approaches study hydration.
