Behavior of Listeria monocytogenes at 7°C in commercial turkey breast, with or without antimicrobials, after simulated contamination for manufacturing, retail and consumer settings

摘要: Uncured turkey breast, commercially available with or without a mixture of potassium lactate and sodium diacetate, was sliced, inoculated 10-strain composite of Listeria monocytogenes , vacuum-packaged, stored at 4 1 C, to simulate contamination after a lethal processing step the plant. At 5, 15, 25 50 days storage, packages were opened, slices tested, bags remaining slices reclosed rubber bands; this simulated home use plant-sliced -packaged product. same above time intervals, portions original product (stored 4 1 C in bags) sliced inoculated as above, packaged delicatessen bags, simulating during slicing/handling retail home. L. monocytogenes populations lower ( P o 0.05) storage breast containing combination of lactate diacetate compared antimicrobials under both scenarios.
