摘要: It is intended to establish a method of inhibiting the formation volatile aldehydes and/or decomposition fatty acids and use thereof. This object can be achieved by establishing which comprises adding an α-oligoglycosyl α,α-trehalose subject thereby inhibit per se in acid-containing material, inhibitor for contains as active ingredient, thereof obtain various compositions such foods, drinks, cosmetics, drugs, starting materials intermediate processed products each having excellent qualities high stability.
