摘要: An isoflavone aglycone-containing composition having genistein as a main aglycone is produced by process comprising allowing protease and β-glucosidase to act on soy protein raw material, an extract of material or by-product water-solubilize the soybean origin convert glycosides corresponding aglycones, separating water-soluble components from enzymatic reaction mixture, recovering water-insoluble matter.
