摘要: Malolactic fermentation (MLF) is conducted by lactic acid bacteria (LAB) and refers to the decarboxylation of Lmalate L-lactate. This secondary difficult control mainly driven Oenococcus oeni.  Uncontrolled MLF, especially in wines with a high pH, which are typical warmer viticultural regions, may render wine unpalatable or even cause spoilage. In this review we focus on compounds emphasise factors that affect growth 0. oeni discuss practical applications.  We also explore alternative technologies enable better over MLF.
