摘要: Abstract THE number of salmonellae present in egg material has a specific bearing on the margin safety achieved by pasteurization process. Previously published results salmonella contamination products generally report only percentage samples analyzed that contain viable salmonellae. For example, 1,629 frozen eggs examined England 1963, 17.0 percent were positive (Hobbs, 1964). This value is similar to incidence reported many years ago Solowey et al. (1946). Such although suggesting low level are not quantitative and cannot be used calculate afforded any proposed such calculations initial must known. The purpose this provide information numbers found freshly broken out prepared under commercial conditions United States. Results from processed during twelve-month period consolidated with recent obtained Bergquist Klusmeyer 1 Patterson Brant 2
