摘要: Aims: To determine the effect of interacting conditions water activity (aw, 0·99–0·85), temperature (15, 25°C) and time (40 days) on growth production mycotoxins deoxynivalenol (DON) nivalenol (NIV) by Fusarium culmorum a wheat-based agar medium. Methods Results:Fusarium grew optimally at 0·995aw minimally 0·90 both 15 25°C. No was observed <0·90aw. Overall, temperature, aw their interaction had statistically significant rate F. culmorum. Production DON NIV were over much narrower range (0·995–0·95aw) than that for growth. The highest concentrations levels produced 0·981aw 25°C, respectively, after 40 days incubation.
