Variation of Superoxide Dismutase in Bovine Milk

摘要: Abstract Individual cow milk is highly variable in its resistance to oxidation. Variation the enzyme (superoxide dismutase) concentration may have a minor effect on oxidative stability of individual cow's milk. Milk from 11 Holsteins and Jerseys were analyzed for 17 wk superoxide dismutase, xanthine oxidase, oxidized lipids as determined by thiobarbituric acid values, produced, fat content. All cows good health normal feed but varied stage lactation age. Average dismutase was 1.1±.48 units/ml with range .06 2.88 variance .23. Concentration approximately 10 2 lower than bovine blood. Assay indicated no significant difference between night morning milkings. Also, affected breed not or Superoxide decreased pro-oxidant oxidase. However, did account large variability raw that had been exposed light.
