摘要: Private food consumption accounts for 30 % of total environmental impacts caused by the final Swiss households. The private expenses gastronomy and hotels account another 6 %. Therefore, it is necessary to investigate better understand possibilities a reduction these impacts. This was starting point collaboration between canteen operator SV Group, life cycle assessment (LCA) consultancy ESU-services, energy supplier ewz World Wide Fund Nature (WWF) in Switzerland focusing on canteens. In first step, an LCA study used analyse about 20 million meals served 240 canteens 2011. data 160 items were linked amounts 10,000 articles purchased this year. supplemented operation resulted full organisational LCA. purchases are four times higher than direct due most important product groups meat dairy products. Improvement potentials have been identified within 14 different themes project group. They include measures (e.g. waste or energy-efficient appliances); supply chain, e.g. vegetables grown heated greenhouses; abandonment air-transported But also dietary choices such as average amount per meal considered option. results recommendations detailed well information other partners Group develop programme ONE TWO WE. It assists customers (companies who commission their premises) reach improved levels performance. aims 20 % cut GHG emissions after implementation participating started successfully with many positively convinced proposed changes provision meals. An initial greenhouse gas compared baseline achieved. good example value calculating footprint company sector using bring down overall
